PEAR AND GINGER CORDIAL
Peel, core and chop 4 large pears. Place the chopped fruit, along with: 500g of white sugar, a 75g knob of ginger and 180ml of water in a large pot, and bring to a gentle boil. Boil for 5 mins, then turn down the heat and simmer for 20 mins. Allow it to infuse overnight, then strain and bottle the mixture.
Serve the cordial as a fruity addition to a white wine spritzer and the pears are delicious with a creamy vanilla ice cream.
PEAR AND CINNAMON RESERVE
Peel, core and chop 10 medium-sized pears. In a pot, place 500g of sugar, 1 tsp of cinnamon and the chopped pears; simmer the mixture until the fruit softens enough to be broken down with the back of a wooden spoon. Once mixed to a smooth consistency, add the juice of half a lemon and continue to cook until the desired consistency is reached.
Serve with hot buttered toast on a Sunday morning or layered inside a delicious bread-and-butter pudding.
PEAR CRISPS
Pre-heat your oven to 140°C. Core 2 large, firm pears, slice into thin rounds (approximately the width of a 1p coin) and place on top of a lined baking tray. Lightly sprinkle with 1/2 tsp of mixed spice and 1/4 tsp of caster sugar. Bake for 40 minutes, then leave to cool.
Serve alongside your afternoon tea as a healthy snack!
