How to make Elderflower Cordial

Elderflower cordial is fragrant, refreshing, versatile and easy to make. Jazzing up a glass of Prosecco or adding a dash to your soda water has never been easier... Or tastier!
Tip: for an extra fresh taste pluck elderflower heads from your very own Elder tree.
20 fresh Elderflower heads, stalks trimmed
1.5 litres water
2 unwaxed lemons
2.5kg white caster sugar
85g citric acid (from chemists)
1. Pour the sugar and all the water into a large saucepan. Gently heat until the sugar has dissolved, then bring the syrup to the boil and turn off heat.
2. Grate the zest from the lemons and slice the lemons into rounds. Give the Elderflowers a gentle swish in cold water to remove any dust and bugs. Shake and transfer them to the syrup along with the lemons, zest and citric acid, then stir well. Cover the pan and leave for 24 hrs.
3. Line a colander with a spotless tea towel or muslin cloth and place over a large bowl or pan. Ladle in the syrup – let it drip through slowly. Use a funnel and a ladle to fill bottles.
4. The cordial is ready to drink straight away and will keep in the fridge for up to 6 weeks.
